I am just moving into the “burgundy phase” of my wine life (especially whites). I tried to avoid it but still it is happening seems a lot like aging, you can try to avoid it but the alternative does not excite me at all. Anyway one of Houston best Sommeliers, all around good guy and father for 2 weeks now, posted this on facebook and I thought you Burg people would enjoy it.
“Newborn babies are like Burgundy. Neither offers a lot of variety (eat, sleep, cry, poop vs chardonnay, pinot, aligote). Both have limited windows in which they really shine. They each can leave you feeling like you’ve spent a ton of money to end up irritable/annoyed/frustrated. However, once you hold one in your hands and breathe in that one of a kind smell… you’ll be in love for the rest of your life.” Sean Beck
