Yesterday afternoon at home we celebrated New Year’s Day with green chile chicken tamales with tomatillo and green chile sauces. They were enjoyed with first ‘Silver Coin’ (Herradura Silver & Cointreau) followed by a ‘Don Julio Gold’ (Don Julio Añejo & Cointreau). The Don Julio Añejo makes a good Margarita, since it’s a light añejo. This was consumed in our den while watching the Rose Parade (via TiVo).
I just polished off some beef and jalapeno and pork and ancho tamales from the Dallas Tortilla Factory…no ritas as I am saving myself for the feast later this evening.

Nice one, Dick! Have been enjoying my Mom’s homemade tamales (pork), and Posole. Great as always. Never tried tamales with Margaritas, but will have to give it a whirl!

Slight thread drift, but can anyone tell me if there’s a special name (or better yet, a recipe) for the special holiday tamales that have a single olive in them?
