This invention makes a lot of sense to me. When I first read about this wine I thought it would be difficult to disgorge it properly (trying to open the bottle by hand while the neck is in a bowl of water).
Roberto, are you saying people drink that prosecco with the lees in it? How does it taste? I had a German uncle who used to talk about “taking his vitamins” when pouring the lees from a beer bottle into his glass.
This is totally like the coolest thing ever. I know where to get the wine, but where do you get the thing?

Yes, people drink Prosecco with lees in it. You roll the bottle just before opening and it looks like a Belgian Wit in the glass. Yummy stuff!
I had this out of a few different bottles at the Biodynamic wine convention in NYC disgorged by the man himself. It is cool to watch and a neat idea. But the wine didn’t do a whole lot for me. Sort of simple.
He said it does well at restaurants though, people get into the whole show of it.
Not sure where to get the opener though.
