Unreal. Based on the clip that he has been creating, and the way the menu is structured, this actually seems quite necessary. What would you call this, butcher’s block??

Does Michelin make you start over if you take a hiatus?

Theres no $ in Mich. 3 star restaurants, so he will be better off in long run. Probably sleep better too.
