For Madrid:

Touristy–but a MUST-visit (they say it’s hemingway’s old haunt): El Botin Restaurant–registered in the Guinness Book of Records as the oldest restaurant in the world

Las Cuevas underneath the Plaza Mayor are a MUST–my fave was Meson del Champiñones

Historic: Cafe de orientes

Super nice: Zalacain

For Churros con Chocolate: Chocolateria San Gines

I hear good things about La Broche (never been though)

I’d recommend also wandering through the maze-like neighborhood of La Latina and visit tapareria after tapareria one evening.

Mark; You must try “Las Duelas” in Haro for dinner…spectacular food and a great list as well.
In Aranda de Duero is a wonderful asador (bodega) called El Lagar…great selection of “jamon.”
