Looking for a reasonably not to complicated Jerk Chicken recipe...

I don’t have time to source ingredients from Kingston, just want something kinda authentic.

should get you in the ballpark. I know three native Jamaicans that take a cup or so of allspice berries, soak them in water, then wrap in foil as a substitue for pimento wood.

Two choices:

(1) For real simple, buy an authentic Jamaican jerk marinade. Walkerswood makes a good one; if you can’t find it locally, order from Amazon, Hot Sauce World, etc.

(2) For hands-on but still not complicated, with nothing more exotic than Scotch bonnet/habanero peppers required, choose a recipe from a Jamaican website. Examples:

No quantities, but this is what I combine together in a food processor to make a good jerk paste. Basic recipe comes from a Jamaican girl that I used to work with in the pharmacy.

Orange Juice
Soy Sauce
Green Onions
Fresh Garlic
Cinnamon
Allspice
Nutmeg
Seeded Habanero or Scotch Bonnet
Black Pepper
Un-sulphured molasses
Dark Rum

And the most important instruction, from one of Fleming’s links:

“Blend all of the ingredients (excluding the chicken) in a blender to make the jerk sauce.”

Kinda reminds me of the warning at the bottom of the label on Frog’s Leap wines: OPEN OTHER END.
