Champagne and shellfish/caviar

Champagne and raw salmon with caviar

aged CdP and osso bucco

German Riesling and spicy Thai food (esp. papaya salad or beef salad)


… can’t decide between those three.

Oysters and a bone dry steely white is probably 4th place.

2001 Leeuwin Estate Chardonnay Art Series with a citrusy himachi (yellowtail sashimi). The wine came alive after taking a bite of the fish. Back in 1988, never forget it.

I’d be pretty amazed if someone had poured me a 2001 in 1988, too!

My faves:

Sauternes and pate de foie gras

Maine lobster and a buttery ass chard (though, I must admit a petrol-heavy Reisling works for me)

Oysters and an Albarino

Sheez, and I’m actually a red wine guy . . . .

Including nothing.

Not sure these are the best, but they were great and a little unexpected:

RRV Pinot Noir (Dehlinger Goldridge) and chicken noodle soup.

Sauternes (1986 Doisy Daene) and Robiola di Valsassina cheese.

Again maybe not the best but worked pretty dam well…

Tocai Friulano and Popcorn

Here’s a weird one that somehow worked for Easter;

Corned beef and cabbage with a good Chateauneuf-du-Pape

Hey, I had that same truffle omelette about 12-14 years ago, with 1994 Ch. de Beaucastel Blanc. Maybe we can generalize: La Beaugraviere’s truffle omelette with whatever you’re drinking from their list!

It’s only haters who don’t get this pairing.

Sauternes and Seared Fois Gras - wow! (1990 Yquem)
Roast lobster and White Bordeaux - wow! (2003 Pavillion)
Seared scallops and Loire Chenin Blanc - wow! (2001 Chateau d’Epire)
And seafood salad and Chateauneuf du Pape - wow! (2001 Clos du Caillou)

(The CDP was blanco and not from magnum…)

I have a soft spot for Sauternes and Fois Gras. The first time that I had this was at my first “fancy” business dinner at the old Daniel. Wow! Up until then, wine was just some pleasant drink, but that meal combination taught me how magical food and wine could be together.
