Winemaking Approach
The approach is simple: allow the wines to develop on their own with very little intervention, minimal or no new oak, and no additives or machines to manipulate the inherent personality of the wines. All wines go through native yeast fermentation with low sulfur added. Most of the grapes are organic (at the very least all sustainable) as all great wine starts in the vineyard. James is masterful in knowing when to pick and understanding the blending process needed for each bottling.
