We’ve had a lot of restaurant meals lately, and I absolutely crave light, fresh, barely cooked food today. I made tzatziki and hummus this morning, which we’ll have with some grilled pita points tonight and a big Greek salad. It’s definitely a rosé night.
We talk a lot about rich meals here. What are your go-to favorites when you need to recover from a few days of excess?
Between work and home projects, Stacey and I didn’t even start to cook last night until 8pm and we’d picked up some Jersey day boat scallops and a small portion of Mahi-Mahi that looked awesome at the store. I grilled some eggplant slices and small zucchini cut in half lengthwise, seasoned the scallops with a Thai dry curry rub, the Mahi-Mahi got a store bought jerk spice preparation. Grilled the fish and served it with green salad, no starch. Not too much and lots of green. Didn’t go to bed feeling like we’d eaten a whole dog.
