Oh! Please post your notes on this. I just picked up one on sale at Winex and since I have never had Pavie, it is calling my name. I have trouble pulling the trigger though because I don’t want to kill it so young.
I too am sipping on the last glass or two of a 2007 La Garrigue CdR we opened yesterday. Softens pretty heavily on day two, but I have heard it comes back strong after about 48 hours. Although these bottles never last that long in this house.
Just threw it in the decanter about 30 minutes ago. Smells freakin’ awesome. Should try the first sip around 7PM CDT.
