it is downright vegetal at lower ripeness. Not particulalry fun unless you want to drink fizzy asparagus juice. I know I don’t!

And if that does happen to be your thing for some reason…might i suggest a bottle of 2020 Ultramarine

Yeahhhh…but this is for SURE not the winemaking style and is absolutely a much bigger problem than ‘under ripeness’. And this is coming from someone who has been buying their wines since the 2011 vintage (and has tried the 2010’s). I assume you have not tried the recent vintages, correct? Also…i would definitely argue the Cruse sparklers are different than Ultramarine so probably not a fair comparison (even with that thread you listed only having a few comments)
