Iowa Pork Chops & Beet Greens, with Nuits St. George

Last night’s dinner was Beeler’s Farm Iowa Center Cut Pork Chops, seasoned with onion powder, orange peel, and after turning, a little onion pepper, thyme. and chervil. The nicely marbled chops were cooked just past medium rare and served with steamed beet greens with chopped garlic, and finished with Tuscan EVOO, sea salt, and freshly ground black pepper. Wine was a tasty 1983 Domaine Daniel Rion Nuits St. George ‘Hauts Pruliers’ - fill 2cm below the cork; cork fully saturated; rich, well developed cherry and dark currant fruit; adequate acidity; with a long secondary fruit finish. It was delightful with the pork chops.

Then for dessert we had cheeses - Black Diamond Sharp Cheddar, Blue Stilton, Affinois goat brie, and Doux de Montaigne; with TJ’s Jumbo Raisin Medley; WF Deluxe Mixed Nuts, and a nice 1999 Ravenswood Cooke Vineyard Zinfandel - rich dark berry fruit, good acidity, and a medium long dark berry fruit finish.
