If you could advance one bottle in your cellar to maturity, what would it be?

Since I’ve never had a truly mature one, I’d do the 2005 or 2009 Rougeard Le Bourg, Saumur.

I’d love to know what any of 2004-11 Terra di Lavoro will be like at maturity.

Both purchased in the last year. God knows when the Foreau will hit its “peak”…

I baby-killed one of the 2011 Goutte d’Or a few months ago. The answer is probably long after everyone currently on this board is dead.

With my luck, whichever bottle I pick would then be mature, but corked!

1986 Mouton. It was unbelievably good young, but then it didn’t just shut down, it disappeared into another dimension.

2012 Piedrasassi Rim Rock syrah. I don’t think there is any way I’m going to be able to hold off on drinking this before it is “ready”, but I believe that it is truly built for the long haul.

'10 or '11 Macdonald. Haven’t tried them young or old, but would dearly love to know what I’m in for.

I am just a simple son of a farmer from Nebraska so my needs are small in comparison, I just want to see what the 2012 Bedrock Wine Co. Cabernet Sauvignon Kamen Vineyard tastes like in 10 or so years flirtysmile
