How did Per Se get 2 stars from the NYT?

great headline and i think ryan sutton is probably the best local food writer and i hope he is invited to take over for pete wells.

Brooklyn Fare is my favorite restaurant in the U.S. and I think Cesar is the most underrated chef in the world. Yes he has four stars from the NY Times and three Michelin stars. But he does not do the circuit like Rene, David and other Chefs and is no where in the influential top 50 ranking yet I think his food is in the top 5 in the world. Brooklyn Fare is also a perfect example of why the Per Se type restaurants of the world have lost touch. If I am going to spend $300-500 per person for food I want the majority of that money to be spent on the best ingredients money can buy and not on real estate and a humongous front of the house staff.

When Per Se first opened you could not get the caliber of food you can get at the original Momofuku Ko, Brooklyn Fare or Luksus all very casual places in non-typical high end dining locations. Their food was at a different level ten years ago but not any more. It might be at a lesser level than the aforementioned types of places and you are just paying for the pomp and circumstance.

What is corkage (if allowed) at BF?

I can’t recall the amount but they do have a corkage policy.

Agreed. There’s a reason he got to be where he is now even if he took his eye off the ball with Per Se for a while.
