Green Chile - Lamb Stew with Margaritas

Last night’s dinner, eaten inside because of wind and temperature, was a spicy green chile and Shepherd’s lamb stew on rice. It was adequately spicy enough that we had Don Jesus Margaritas instead of wine. We nearly finished the last of of our last bottle of Don Jesus Reposado, a very good tequila that disappeared during the blue Agave blight a few years ago. The stew was more spicy on entry than on the finish and the heat only got to my forehead. It was quite tasty and enjoyable with the rich Margaritas.

Then we finished with a Pink Lady apple and three grappas = Don Quijote, a Los Alamos grappa from Malvasia Bianco; Sarpa di Poli; and a wood-aged Grappa di Sangiovese from Badia á Colitbuono. The wood-aged grappa was best with the apple tonight.

Dick, have you had/seen Porfidio in NM since the blight? One of our favorite tequilas…it has disappeared from the planet it seems.

No, I haven’t seen it for some time. I don’t remember if it was associated with the blight.

In a gourmet European food & caviar and lots of other goodies store in Las Vegas, Nevada, I saw a bottle of Porfidio single-barrel agave añejo (not tequila, bottled in Puerto Vallarta). It was quite pricy, over a hundred dollars.

I seem to recall seeing Porfidio here in ABQ not too long ago.
