Tonight’s dinner was Shepherd’s Lamb and Green Chile Sausage in Rao’s Eggplant Sauce on Tagliarini with grated Pecorino Romano Cheese atop. It was very much enjoyed with a tasty 2001 Ruffino Chianti Classico Riserva Ducale Oro - rich cherry/berry fruit, adequate acidity, some dusty tannins on the finish initially, but disappearing with the pasta, and a medium long rich fruit finish. Then for dessert we had some nice Stilton Cheese with a 2001 Hexamer Saberheimer Marbach Riesling Eiswein from the Nahe - rich white fruits, bracing acidity, with a long, rich fruity finish. It was good with the Stilton, but didn’t have the depth of fruit of a good Sauternes or Barsac.
