Green Chile Chicken Soup with Counoise

Tonight’s supper was a Poblano Chile Chicken Soup - rich chicken stock, chicken, poblano chiles, pearl pasta, carrots, celery, onions, and garlic. It was the spicier of our Poblanos, but was still enjoyable with a 2002 Tablas Creek Counoise - bright red fruit, good acidity (both of which helped with the spice of the chiles), spicy mid-palate, and a nice fruity medium long finish. I initially thought I’d rather have a Margarita; but the Counoise matched rather well. These were the ‘hot Poblanos’; but they weren’t too hot for for the wine.

Then for dessert we had Affinois Goat Brie and Old Chatham Sheep’s Mllk Camembert with a 2001 Ridge Zinfandel ‘Dusi Ranch’ and deluxe mixed nuts and Jumbo Raisin Medley. The various combinations were very enoyable. The raisins and nuts work with the cheeses to make a great pairing with Zinfandel. Tonight’s Dusi was much fruitier than any previous and was a good match with the cheese, nuts, & dried fruit.
