Green Chile Chicken Soup and Puligny

Tonight’s supper was a light green chile, vegetable, noodle, and chicken soup. The green chiles were labelled ‘mild’; but they were much closer to medium. The chile heat made it to my eyebrows, and no further. Veggies were carrots, onion, and garlic. The chicken was cleaned from the carcass of our roasted chicken of a few nights ago. The noodles were thick and homemade. The base was a rich chicken stock. It was all very enjoyable with a 2004 Vincent Girardin Puligny-Montrachet 1er Cru ‘Le Cailleret’ - initial color was light yellow-gold, deepening to medium yellow-gold with time in the glass; rich, complex nose and flavors of minerally white fruit and flowers; a rich, full mid-palate of complex minerally fruit and good acidity; and a very long, complex fruit and mineral finish. It was very good with the slightly spicy soup; the soup was more solids than broth, so it went well with the P-M. It was an enjoyable meal on a clearing evening; after an afternoon of wind, lightning, thunder, and occasionally heavy rain. Temperatures never got above 60F all day.

Then for dessert, while watching Monaco GP qualifying and race (via TiVo), we enjoyed a slightly under-crisp, but sweetly fruited Fuji apple with a Banfi Grappa di Brunello, still a bit hot on the finish, but the sweetness of the apple softened the grappa. A great finish while enjoying F1 qualifying and the race.
