I was in a mood to do something a little different for dinner last night, and I had some leftover roast beef, so…
–Sliced, toasted ciabatta bread
–Slices of roast beef
–Carmelized onions
–Slow-roasted roma tomato slices
–Gruyere cheese melted on top
–Dijon mustard on the top bread
It was REALLY good. Any other great dinner sandwiches you’ve made?
Grilled or roasted lamb on a baguette with brie, mayo and roasted garlic.
“Cobb” sandwich - chicken or turkey plus bacon, tomato, avocado, mayo and lettuce on your choice of toasted bread.
Pulled pork!

I could do (and have done so lately) a very basic sliced grilled filet mignon on a toasted baguette schmeared with fresh roasted garlic with some home made au jus for diping!
Frites on the side. Simple and delish. Yummo.
I have several huge, ripe heirloom tomatoes from our garden today, including brandywine, pineapple, and a fleshy red-pink one with no name because somehow, we lost the plant’s name tag. We really enjoy BLT* for dinner, so that’s what’s on tonight’s menu along with '08 Tempier rosé.
I suppose technically it’s a BLAT since we like to add avocado.
did that tonight. Fresh baguette from C’est si bon Bakery (baked at 4pm), Fallot Mustard w/green peppercorns, lettuce and Proscuitto. Didn’t have to fire-up the oven on a hot day. Fine with me.
Whether it’s grilled cheese, fried egg, tomatoes and brie and dijon on a baguette, I agree that you can do a LOT worse than sandwhiches for dinner!
Breakfast for dinner is another fine concept that gets a lot of play in my kitchen, though I like breakfast more of the savory variety, which helps when you’re having it for dinner. Not quite a cereal or pancakes for dinner guy.
