I tasted this about 3 weeks after it went into barrel, and it wildly outperformed my expectations. It was more stylistically similar to a very, very good American blended whiskey than anything else.
At the risk of Otto going bananas on meā¦Iā¦have aā¦dumb questionā¦ā¦did this go into a heavy charred barrel like bourbon? Or more like Canadian whiskey?

Two types of barrels. We took used Pinot Noir barrels and took them to an outfit that removes the heads and then shaves off just past the point of where the wine penetrated, about 1/2ā down. The barrels were then re-toasted and then charred to #2 and #3 levels. We also bought Oregon oak barrels made specifically for whiskey from 2 different cooperages. Again with #2 and #3 char.

Does distilling remove smoke taint or does it actually add to the whisky flavor?
Maybe this will help. It is Whiskey, not Whisky.
Seriously this doesnāt seem much different than some of the other whiskies with additive ingredients. Whiskey is a broad category.

Much like some wines, you probably would be aghast at what goes into some whiskeys.
Ourās is au natural.

It CAN. As I discovered back in 2021, not all distillers are created equally. Our partner in the distillery, Lynsee Sardell, is a stinking genius. Anyone whoās asked I have said as good as whatever I am perceived as at what I do, sheās 10x as good at what she does. Crazy talented. Like savant-level stuff. Our brandy is utterly and completely pure. Weāre bottling 2 barrels of it simply to prove that point (itās also stupid delicious). However, I have tasted other distilled smoke tainted wine that was garbage.
