Opened and poured a glass last night. Very tart and quite grippy. Left the bottle on the counter under cork.
Day 2: Nose of earth and herbs de provence. Smooth, wonderful balance, hint of spice. Ridiculous QPR at $15! -

Popped, let sit in open bottle for 1 hour, enjoyed over the next 3. Explosive nose of smoke, earth and meat. Rich, zesty, roasted shank bones. Very nice bottle.
