Frying tips?

I have put my oven on broil to finish off the top of a pizza

I don’t really know the difference between baking and roasting. If it’s just a matter of “how hot is the oven” what is the cutoff temp for baking versus roasting? I gotta say, though, “roast chicken” sounds better than “baked chicken.”

I did a little bit of rainy afternoon frying
in my wok. Easy peasy and a great way to use up small amounts of peanut oil. I can see why mother always preferred that - and she fried food all the time - unlike me where it’s a major adventure to clear out all kids/pets and get fans / exhaust going.

So I did a huge batch of eggrolls one time and used excess beef fat I rendered from a brisket. It’s strange but tallow didn’t smell at all. I’ve come to the conclusion canola has one of the worst smells for frying oils because it triggers that “fried food” smell immediately. I large batch fry things, let them cool, and vacuum pack seal them into the freezer then air fryer warm them up.
