Open to suggestions for transportation, accomadations, and food. I don’t think getting into certain wineries is an issue.

Train is easy, but not necessarily of much help if you’re planning to visit outside of the cities
Lyons by train is super easy.
The Hotel-Dieu (an Intercontinentsl) was very nice and well located.
Highly recommend staying at Les Avises in Avize (hotel of Selosse). Reasonable price, very comfortable, great food in an idyllic location. Personally I didn’t love staying in Reims. Depending on what you plan to do, a car is very helpful. You could take the train to Lyon and rent a car there. We are actually doing a trip to France in October and flying into Geneva, renting a car on the French side and driving to Lyon, burgundy, champagne and then flying out of champagne.
Just a heads up that you cannot walk from the Swiss side to the French side at the airport in Genève anymore, you need a same day airline departure ticket or take a taxi and go through the border at Ferney-Voltaire. If you are flying into Genève via Air France, no problem.
