Food pairing with the Curnonsky's five, any thoughts?

For my 11th birthday (yes, leap year 2024) I want to drink Curnonsky’s five with some friends. I’m still struggling with choosing what dishes to serve with the wines. These five wines are described here on the forums, but I am still looking for the ultimate wine-food combinations.I thought about the following (in this order):

  • Coulée de Serrant (2003): Salmon rilette with pickled vegetables.
  • Chateau Grillet (2017): Sushi (mackerel, eel and tuna) or turbot with beurre blanc.
  • Montrachet (Jacques Prieur 2017): Chicken ballotine with cepes.
  • Chateau Chalon (Jean Macle, 1998): Quiche from Comté.
  • Chateau d’Yquem (1983): Crème brûlée with apricot-mango compote.

Although I can cook quite well (at least that’s what my wife and my friends think), the dishes should not be too difficult to prepare. I want to sit at the table with my friends longer than spend the evening in the kitchen.

If anyone else has experiences with dishes that match exceptionally well with the above wines, I would love to hear about them. Thanks in advance for the response.
