For the sauced, how about a higher end 2005 CdP?
I love rib cap. You really can’t go wrong here. With the thyme version, a big Spanish red would also go pretty nicely. If you’re looking for a contrast to all the richness, a rustic red Burg would be nice, too.
Flannery is like my favorite person in the whole world. Got a couple filet ends I need to do up sometime soon.

I’ve made the rib cap three or four times before and cannot remember what I had with it and the rib cap does not appear in the TNs I have.
