Depends. I usually place a big order to coincide with an offline…so order comes in on Friday and I cook a bunch of product on Fri/Sat and the rest goes into the ice box immediately. If that isn’t the case, I’ll fix something day of and freeze the reaminder. Sometimes, I’ll split an order with locals to help spread the shipping cost out.
