The Blue Blazer is the quintessential flaming cocktail, dating from the 1850s or so. While a basic whisky punch, the presentation is dramatic. Not sure how I avoid serious injury considering I have only ever done this when really lit (and not in over 10 yrs). About 3 min into the video is the flaming part:

One of the craziest drinks I’ve had is the flamed Jalepeno Margarita. Slice Jalepeno in quarters, pour Grand Marnier, 151 and Silver Tequila, and flame for 5 minutes.
Remove jalepeno’s and crush in separate glass. Put in bottom of Margarita glass, and finish drink off however you make your margarita.

Flaming Dr. Pepper; good ol’ pyro fun and tastes great! Haven’t had one in well over a decade…
