Favorite way to cook/eat wagyu?

Potato would be a little too heavy at least for my palate.

In Japan, A5 is often served with something like pickled vegetables, grated radish or something like that. Just something that refreshes the palate. If you can find it, grated wasabi is like the perfect pairing for it.
Never tried it but just thinking about it, kimchi could be really fun actually.
