My wife makes really excellent Italian Wedding (two versions), Chicken Noodle, etc. but my favorite is a Tuscan white bean, spicy Italian sausage and Kale. The only soup we ever eat from a can is this organic tomato soup that we doctor a little and have with BLTs or manchego/serrano ham sammies.
What do you guys like? Tonight we are having soup, veggie/beef . . .
I LOVE soup, all kinds of soup!!! My wife is not a fan, so she rarely makes it, but just about every soup I have, I love.
I make a quick chicken tortilla soup quite often, but I prefer soups with veggies in them. There was a fantastic meatball soup we made some months ago that I couldn’t get enough of - need to look that recipe up one more time…
Zingerman’s Mushroom Barley, but no olive oil instead of margarine, a small handful of dried porcini (rehydrated) and a pound of mixed of “wild” mushrooms instead of fresh porcini.
Walruses generally like shrimps, crabs, tube worms, soft corals, tunicates, sea cucumbers, various mollusks and clams. Just put those in a pot with some spices and boil!
Adore soup as well and could eat it pretty much year round. One of my better recipes is lentil soup with chorizo and tasso ham. Also have had good results with gazpacho.
Last night made a big pot of chicken & corn chowder. Threw in about 6 slices of crispy bacon to give it that extra nuance!
I love soup – probably the one I make most often is a Tuscan “Zuppa di Pane” that we had at Castello Banfi in Montalcino when we were there. It has 3 greens plus Tuscan beans (Cannelini) and other vegetables – cabbage, chard, and spinach. Wonderful flavor. You serve it over stale bread (pane).
Maybe the most impressive soup is Thomas Keller’s French Onion Soup which takes a long time to cook but is fabulous.
I sort of invented an Asian version of Cockaleeky Soup for a Robert Burns dinner a couple of years ago.
At any rate we’ve done many of the soups in Julia Child’s cookbook and I set out to cook all of the soups in The Splendid Table. There is an awfully good mushroom soup in that.
And in recent months I’ve been experimenting with miso soup and dashi, varying the amount of wakame and kombu, etc.
I’m starting to think that it’s time for French Onion once again… the weather sure is right and we have been invited to a dinner party in a couple of weeks. I could take it and finish it there. You need the hemispherical lion’s head bowls and crunchy crusts to fit and aged Comté cheese to melt over the top…
I was just thinking that I needed to make some soup soon!
chunky tomato with spicy chicken is one of our favorites here
one of my friends gave me the recipe for smokey corn chowder that I tried…very good as well!
