Favorite Rice Bowl Recipes?

Since I am on my keto diet ( if u are interested be sure to know it better here https://betterme.world/articles/keto-diet/ ) so here’s a simple recipe for a rice bowl:

Ingredients:

  • 1 head of cauliflower, chopped into small pieces
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 lime, juiced

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the chopped cauliflower, olive oil, sea salt, and black pepper.
  3. Spread the cauliflower out in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  4. While the cauliflower is cooking, prepare the rest of the ingredients.
  5. In a separate bowl, mix together the diced avocado, cherry tomatoes, red onion, cilantro, and lime juice.
  6. When the cauliflower is finished cooking, remove it from the oven and allow it to cool for a few minutes.
  7. To assemble the rice bowl, divide the roasted cauliflower between two bowls and top with the avocado and tomato mixture.
  8. Serve immediately.

This recipe is high in healthy fats from the avocado and olive oil, and low in carbs thanks to the cauliflower “rice”. It’s also packed with vitamins and minerals from the fresh veggies.
