Seriously, I don’t like the hype involved in opening special bottles. I have to think far enough ahead (24-48 hours for stand-up time) for these older vintages, but I know I can always tuck them back in if the timing doesn’t seem right. What I can’t do is decide at the last moment that I want an older bottle like that (huge sediment) and expect to do it justice taking it out of a cold cellar with sediment swimming through. So I plan ahead a bit, and sometimes change my mind. Not to the detriment of the bottle, of course.
