I haven’t had a chance to use Astrea Caviar in one of my dinners yet but Charlie sent me a sample of the Kaluga Hybrid and it was well-balanced- creamy and briny. It’ll work really well in a butter-based sauce or paired with some cheese. 25% off is a crazy deal!

Excited to try my Kaluga with… a bottle of scotch? This lightly smoked, pleasantly briney, and just a tad creamy Caol Ila might be a fun pairing.

This is a baller picture. Best Champagne I’ve ever had was a 1988 Krug Clos du Mesnil. Just received our 200g tin of the Schrenckii this afternoon. Can’t wait to try it. Probably have some Flannery or Morgan Ranch steaks for the dinner.

Cracked the Astrea tin for Valentine’s Day to go with the dry-aged fish I bought. Winner-winner, sushi dinner!

End of night consensus was the Shima Aji handroll with grated radish, nikiri, and caviar and the Chutoro crisp (wonton wrappers I fried) with a very healthy amount of caviar were the favorite courses. And the caviar straight from tin-to-mouth, of course.

Paired with Matthiason 2021 Falanghina, which was extra salty with a pleasant hit of minerality. :kissing_closed_eyes: :ok_hand:
