Escargot l'Amphytrion with Bourgogne Passatoutgrain

Tonight we had the escargot left over from last Friday’s dinner, along with another tin of the larger snails, with the sauce leftover, amended with another four mushrooms, sautéed with garlic, black pepper, and thyme; and a little tomato sauce. With six each of the both the smaller and larger snails, it made a nice light meal. After trying this dish again after nearly thirty years, I’m becoming addicted. In general, I prefer the taste of the larger snails - they are richer and more flavorful than the smaller ones, that are still among the best snails I’ve had.

Our wine tonight wasn’t as good as either that we had on last Friday. It was a 2005 Dom.Michel Lafarge Bourgone Passetoutgrain ‘L’Exception’ - dark, clear ruby in color; muted fruit, light tannins in the middle, and a medium dry fruit finish.

Then for dessert we had a half a bottle of 1994 Fonseca Port with TJ’s chocolate bars (milk for Carollee and 72% cocoa ark chocolate for me. This was a nice finish to a day with increasing cloudiness and threats of rain. I hope it appears because we need it.

Love slugs Dick, but I’ve been looking for a cryo product instead of a canned one, with no success. D’Artagnan used to carry one, but it appears discontinued.

Drank the '06 Potel/Aviron Julienas VV again last night ~ love good Gamay…(sigh)
