Not exactly eggplant parm and takes longer than 2 hrs, but the Frankies Spuntino eggplant marinara recipe is absolutely killer.
You can definitely make it on a sheet pan, but to really get it crispy, you need to both preheat the pan in the oven, and also flip halfway - to me this really isn’t that much easier than just frying up slices
But 300 calories less.

It’s eggplant, tomato sauce and cheese.
After that, all the tweaks depend on your personal needs/tastes.
If you’re concerned about fat and time, the thinner you slice the eggplant, the less oil you would need to cook/bake/roast the eggplant. It would also go faster. So presumably you could thin slice lots of eggplant and then once baked/roasted you could stack them to even out the ratio as you assemble with the sauce and cheese for your final cooking.
