Yeah, that lamb looks INSANELY good, but probably because I haven’t had lamb in too long. My wife won’t make ‘baby meats’…

I’d be interested in the pairings as well. Perhaps some Barolo with the lamb?

I cooked a rack of lamb removed from the lamb last night with a super sauce that I made on the fly. Served with a 2000 Ristow Quinta de Piedras Vineyard Cab out of magnum that was a pretty tasty match.

I love me some Ristow - I miss that stuff…

Sides: Roasted Brussells Sprout with Garlic and Olive Oil and Rice Pilaf

Didn’t have any wine, although I do agree that a Barolo would have gone quite nicely.

Incidently, my wife gave me a 97 Parusso Mariondino Barolo for Easter.
