Dom Perignon Serving/Tasting Order????

Tomorrow night for our caviar and smoked salmon course, we haver four recent vintages of DP on tap. Service order suggestions would be most welcome.

1998
1999
2000

Open at least a half hour before serving and don’t serve ice cold. Their all too young to really worry about ordering them though.

While I generally serve oldest to youngest, in this case I would do the reverse.

Whatever you do, serve the '96 last because the other vintages will be a disappointment (they may be anyway - I’m not a big fan of '98 or '99) if you drink them subsequent to the '96.

I agree with Ray, sort of. I would probably serve the '99 first and then the '98, followed by the '00 and the '96. I do think the '00 is much better than the '98 and '99 but it is certainly not as good as the '96.

Agree with the point above, order will not matter much in terms of taste (all are drinking young), so would typically default to oldest first. 1996 and 1998 are the best 2 IMO . . .

I think we might have a 90 too

+1. If you can open a 90 I think you’ll be rewarded…

Put the 98, 99 and 00 for sale and buy a 90 instead (and maybe a 85 too) and drink 3 very good wines instead of 3 so-so and 1 one very good. Otherwise open in reverse order of vintage.

My order would be:

  • 2000

  • 1998

  • 1999

  • 1996

  • I’d do the 2000 first because it is the most expressive right now.

  • I would then do the 1998 because it is open, but still has a decent amount in reserve

  • The 1999 would come third as it is still tightly wound and has higher variability than the other vintages (can be a bit hit or miss).

  • 1996 should come last, but be sure to open it when you open the 2000 as this gets better and better with air and some warmth.

I went in reverse chronological order. Lots of others went in for the '96 right off the bat.

I went for '98, '99, '00, then '96, since it was the biggest one.

Most others went left to right, which was '96, '98, '99, '00

I disagree.

I went 98, 99, 2000 then 96. The 96 needed the air and did benefit as it was much more open than the small sip taken right at opening. Even after a good 30 min of air it was still tight.

It was a joke… but as Ken pointed out I’m not very good at that [grin.gif]
