This may not be exactly the answer that you are looking for but I have been buying at Korin in NYC for the past several year. Huge selection of both Japanese and Western style knives. What knife is best for you depends on you and what and how you cook. I like this store the best because you can go in and handle dozens of knives and they patiently answer as many questions as you can fire at them.
