Danish Ebelskivers!

My better half recently got an Ebelskiver pan and she made them this morning for the first time. Tiny stuffed, puffed pancakes of goodness. We filled these with chocolate chips and some of them with blackberry preserves. I highly recommend trying these.

Chris- My aunt introduced me to these years ago. I used to make them Sunday mornings as a very special breakfast.

They can be made savory too. The sky’s the limit on on what to put in them. I imagine kids will think they’re a lot of fun too.

Becca’s been making these for a while. Sometimes she puts bacon pieces in them.

My kids love them! We put a while ripe raspberry in each one.

There’s a restaurant in Portland where they do an appetizer that is an Ebelskiver w/ an egg yolk in it & serve it w/ sweet breads. I believe bacon was also somehow involved. Amazing.

One of the most popular Japanese “street foods” is Takoyaki.

Tako means “octopus.” You could probably make Takoyaki with your Ebelskiver pan.

My wife makes them with Nutella - simply awesome with fresh whipped cream !

Santa brought me a pan yesterday, and I’ve been experimenting this morning with different preparations. I did some plain ones with powdered sugar, some filled ones with black cherry preserves, and some savory ones with parmigiano, oregano, and cracked pepper. They’re different than I expected. I thought they’d be airy and eggy like popovers, but they taste a lot like… buttermilk pancakes! Still, they’re delicious, and my son will finally have a legitimate reason to eat his pancakes with his hands.

I wish I’d noticed this before we filled ourselves to the brink of spontaneous combustion. I’ll have to try that!

The aebelskiver thrill has clearly passed in this forum, but I made another batch yesterday and wanted to share a couple of successes. I filled some with nutella, and they were sinfully good with a dollop of whipped cream. Jan, my children are forever thankful to you for that particular post.

Another big hit-- lightly sweetened cream cheese in the center.

Melissa, when you run out of ideas let me know and I can post a Takoyaki recipe.

Doubt if the kids will be into octopus though, unless you have a budding Bart Simpson…

Reading this thread makes me want an ebelskiver pan

Making these for a few years. Last batch had a brandy banana mixture (think bananas Foster). They do take a few extra steps and make a lot of dishes, but worth it.

Okay, I took a shot at these. They’re pretty darn good!
