Cutting boards: Plastic vs. Wood (vs. wood fibre) --- which one is better?

I guess your original post was not clear to me but now that I understand what you are saying but your point in my opinion is irrelevant. I break down my chickens using the same method (and yeah for most of the operation your knife does not need to touch the board) but whether or not a knife touches the board doesn’t really matter. To say it’s wrong is just your opinion.
