Commercial glass washers are amazingly quick which really helps with clean-up at the end of the day or when we have big groups. We donât use Zalto, but I know of wineries using them, so they do make commercial racks to fit. The bowl has to fit somewhat snugly in the rack to keep the stem straight, otherwise they tilt and hit the next stem and break. It doesnât happen often, but it can be a real PITA when a stem breaks in the washer.
I never really gave much thought to the process. But a restaurant can only own so many glasses and they hope to turn tables multiple times per meal (lunch and dinner). If the cycle was 80 minutes, that would be really problematic.
