Chicken Soup & Pâtes, with Carignane

Last night’s supper, after and interesting pre-Easter tasting at Susan’s (wines to match with lamb, Spam, & ham), was Progresso Chicken and homestyle noodle soup, enhanced with a tin of light and dark meat chicken, a cup of rich chicken stock, garlic, and chervil. The soup was accompanied by some of the pâtes leftover from Sunday night - pork liver, duck liver & chicken liver with port, a pork & pork liver with black truffles and cognac; and pork liver & foie gras with Sauternes. The pâtes were accompanied by shallot confit, Lucques and Picholine olives, and pitted Kalamata olives, as well as a quarter of a TJ’s baguette, warmed and sliced. Wine was a rich 1996 Ridge Carignane ‘Oat Valley Vineyard’ - spicy red and dark fruits; adequate acidity; some residual tannin when consumed by itself, but tannins disappeared and it was very good with the soup and pâtes; with a medium long fruity finish. The pâtes were rich enough we didn’t have dessert, just watched practice for the Chinese Formula 1 Grand Prix (via TiVo).
