Great and terrible. Will miss Rob at Mado, but he will be terrific in their new venture (I took a Sunday butchering class he lead at Mado in the beginning of the summer and was impresed with his precision and creativity). It will be great to have a careful, custom cut, whole animal butcher nearby

I am particularly excited about the possibility of charcuterie. We really need a top rate charcutier here in Chicago.
