My buddy called me panicked because I had forgotten that today his buddy François from Château de Meursault was at his shop offering a short tasting to customers.
He really had to beg to make me come over considering I was right smack in the middle of cooking my mom’s “carrés au sirop d’érable” and I dare not be disturbed when I prepare this holy and blessed dessert. I decided to go after the syrup was prepared and the crust had gone through the first cooking stage. Alas, this little trip to the caviste cost me my carrés as they don’t look the way they should (we’ll know how they taste tomorrow).
Anyhow, I got a chance to try a couple of 2021 (and a few others) and got to chat with François a little bit and he’s very knowledgeable and happy to share about the methods and wines.
The domaine is now Ecocert certified. They’ve been going through organic conversion for a few years now taking the time to understand each step of the process and to scientifically validate it. They seem like pretty thorough (and sceptic, in a good way) people. They do sélection massale for all their vineyards and they have just started questioning the root stock they are using. They also use indigenous yeasts for all their vinification. They’ve been able to considerably reduce the use of sulfur and copper by spraying milk on their vines (which help protect from various ailments as well as lessen the sun’s impact in warm years). This is the first I had heard of this. He was talking about mycorrhizae and companion planting when other people walked in and we had to start the tasting.

2021 Bourgogne du Château
This is really good for a generic Bourgogne. The fruit is from various plots in Savigny-Lès-Beaune and Pommard. Easy to like, fruit forward (cran-cherry) but with enough structure to balance everything out. Lifted acidity but it finishes smooth with some florals. No noticeable wood but you can tell it contributes to the structure of this. I really liked it and the price is right.
2020 Savigny-Lès-Beaune
This is more serious and bearing a very deep bourgogne color. Red-fruited again but with more spices and a lot more structure. The tannins are really nice though: fine but assertive. I think this could be better in a few more years.
2021 Bourgogne Clos du Château
Nice zippy nose on golden apple, pear and citrus. No noticeable oak on the nose nor palate. Plenty of fruit concentration on the palate with a a pretty long finish. This is the one I had the least of (one sip as I was running out the door) but my buddy gave me a bottle to revisit at home at a later time.

2017 Château de Marsannay Les 3C
This cuvée was not commercialized by the Château. The 3C name comes from the three parcels it comes from: Clos Salomon, Clémongeot and … I can’t remember. Anyways, the Clos Salomon and Clémongeot are normally vinified as single parcel but in 2017 they didn’t have enough juice so they blended all three and made this magnum bottled only cuvée. Floral nose to go with the red fruits, some spices and it’s starting to show a little evolution with leather/beef stock notes. Again, fine tannins that show up and stay all the way to the finish. This could still some some cellaring time but it’s pretty fun to drink now.
I already liked this domaine for their Marc de Bourgogne, their Pinot Beurrot and their Pommard Clos de la Platière and this tasting further convinced me that there is a lot to like about their wines.
