Tonight’s supper was a Cajun-seasoned lentil soup with Cajun-smoked pork & alligator sausage. It was filling and tasty with a 2004 Tablas Creek Côtes de Tablas Rouge, 64% Grenache (I wanted a mostly grenache blend for the soup), 16% Syrah, 13% Counoise, 7% Mourvedre. It was very good with the lightly spicy lentil soup. The wine was a light ruby-garnet in color; complex nose and flavors of mixed red & black berries, licorice, and spice; balanced mid-palate of complex spicy fruit and ok acidity; and a medium long fruit & spice finish. A very enjoyable cool weather meal, temps today barely got into the 40sF and the snow has been steadily disappearing with mostly clear skies and sunshine. The soup was rich and filling enough that we didn’t have a dessert.
