Black truffle dinner

Our wine group bought .53 lbs of black truffles for our Burgundy dinner last night, which ended up as 5 golf ball sized nuggets. Here is the list of food and wines with a couple of my comments from a foggy memory. The three main courses were covered with truffles - the way to really enjoy them rather than just a few slices. Each dish had grated truffles in the sauce and several slices on top.

All the wines showed really well and not surprisingly the GC white Burgs just how much the monks knew about terroir. The density and viscosity of the 1er crus just wasn’t up to the GCs. The Bouchard Chevalier was the last to really open up and was possibly the white of the night, although the 04 Leflaive held its own for a while. I’ve had the Groffier Bonnes Mares three other times but this bottle was as good as could be, with the dark fruit of '93, some good secondary flavors, and great length.

-Sauteed Wild Mexican Shrimp
'04 Clos des Goisses, Philipponnat - Clean, full bodied, and dense. Very nice.

-Scallops w/White Beans, Arugula and Black Truffles
'96 Meursault 1er cru, Leroy - very young, but a little underwhelming for Leroy
'04 Puligny Montrachet, Les Pucelles, Leflaive - matchstick nose I love; more zest and life
'05 Clavoillon, Leflaive - fuller bodied than the 04 but not up to the Pucelles terroir
'07 Puligny Montrachet, Clos de la Mouchere, Boillot - always excellent; an annual buy

-Chicken Breast w/Pearl Onions, Potatos and Black Truffles
'05 Chevalier, Bouchard - Surprisingly tight for 05 but opened up after 2 hours; beautiful
'06 Corton Charlemagne, Boillot - also took 2 hours; minerals and chalk; excellent
'07 Montrachet, Latour - lacking all that you expect from Montrachet

-Braised Beef Ribs over Pasta with Black Truffles
'01 Ruchottes Chambertin, Esmonin - pretty color and good fruit; nice.
'93 Bonnes Mares, Groffier - killer nose and length; best of any '93 I’ve had.
'96 Bonnes Mares, Groffier - Tighter and more acid than the 93; good, probably not ready
'90 Clos de la Roche, Ponsot - a clean 90 with no roasted notes, tertiary truffle notes.

'92 Taylor Port - A young VP that will take another 20 years to be at it’s peak.

Had the 04 Leflaive Pucelles a month ago. Was showing come hints of age but still plenty of acid and life to go.

half pound per person, right Jerry? Groffier gets a bad and unjust rap for being overoaked–with time, the wine eats the oak and it isn’t a problem.

Alan - trust me that we had plenty of truffles per dish with half a pound. In fact for my dish I didn’t use my share there were so many…
