Pallazzo and Venetian are joining Hyatt, bigger plus for me than other chains.
Although back in the day, you could get in on an IHG credit card free night.
Wife and I generally stay at the Four Seasons when we visit just the two of us. Boutique hotel within the Mandalay Bay, with its own private entrance and elevators

I haven’t been to Vegas in years but used to go a lot for work and my last time, stayed at the Wynn – got a decent rate then took an upgrade offer when checking in and loved it. Room wa lrge and very comfortable with a great view. Not sure if still true but the Wynn seemed overall quieter (as in the volume on slots was
turned down so I did not mind walking. through) and the air was not as smokey … I was surprised by all this and enjoyed the place feeling very Vegas but without the usual Vegas drawbacks. Lovely spa/pool. I’d go back if still like that. I really enjoyed having the small ptio overlooking the Lake of Dreams for a quiet cocktail.
Thanks for all of the input everyone. We decided to stay at the Park MGM, as the non smoking aspect is more important to the wife than a slightly fancier place.
As far as restaurants, if you had to pick one steakhouse on or close to the strip, would it be Edge, Bavette, Capitol Grille, Delmonico’s, Sinatra, or something else?
And same question for Italian…Esther’s, Fresco, Amalfi, Bramare, Balla Italian Soul, Scarpetta, or Carama?
And is Bouchon good? Jaleo? Any other places near the strip I’m missing?

I like scarpetta a lot, personally, but am not as familiar with the others.
Bouchon is fantastic. I highly recommend it.
I believe all of these places are BYO friendly, albeit at a bit of a higher than usual cost given it’s vegas.

We had a fantastic dinner over the summer at Mother Wolf at Fontainebleau.
Not local, and haven’t tried “all the places” like some. But that said, we recently went to Mayfair Supperclub and were surprised by how good the steak was, plus had a great time with the show. Also really enjoyed Delmonico a few years ago.
Scarpetta was also very good and managed to feel at least a little bit authentic despite being a large scale Vegas restaurant. We reserved a window/fountain table - pretty sure the fee can be applied to the meal, so no reason not to unless you’re only getting a drink. We also really like Superfrico - get the table side mozzarella (though it’s a lot for 2 people). The acts this year were not as good as last year but I guess they continue to change. We also had a great meal at Matteo’s.
I would consider for Brunch and bring a top flight champagne. Breakfast items plus many of the best regular ones as well. (Roast and fried chicken, Croque Madame)
We stay at the Cosmo so have been to Jaleo several times. It’s a fun, casual, sangria drinking while plate sharing kind of place. (Chicken croquettes and Paella are killer)
Bouchon has a fanatic seafood platter. They also have an amazing steak with caramelized shallots.
Both available for brunch as well…the steak just comes with eggs 
We’ve eaten multiple times in Napa and Vegas and they seem the same to me, might prefer the atmosphere of Vegas tbh once you get inside.
é is a limited seating tasting menu of the best of Jaleo and is a great experience.
Bavette’s and Bouchon. Easy choices.
Head to Lotus of Siam off the strip for some great Thai food too (I miss the old location, and prices, but it’s still worth the trip).

Just wanted to thank everyone for their input here. We really liked the Park MGM and would recommend it for sure, especially if you don’t like cigarette smoke. The service was really good. Only complaint is that the slot/video poker payouts seem really low. But I don’t have gambling luck anyway. We went to the Cosmo for dinner one night and it just seemed too slick and filled with bros, so I’m glad we didn’t stay there.
We had a really good lunch at Emeril’s Fishhouse, delicious dinners at Bouchon, Scarpetta and Bavette’s. The wife wasn’t feeling great one day so we cancelled dinner at Ocean Prime, but our friends who went really enjoyed that too. Wine prices in Vegas are really high, and Emeril’s actually had the best pricing and the most interesting list. A lot of the lists are just filled with big, boring CA wines but we found at least a couple of things worth drinking at every place.
