Ingredients
6 Belgian Endive
50g-100g pancetta/bacon
1 glass white wine
50ml heavy cream
5tbsp bread crumbs
5tbsp parmesan
30g butter
Preparation
- Put old bread/toast in a food-processor.
2.Add parmesan to the breadcrumbs and mix it
\ - Slice lengthways the belgian endive in two halves
\ - Optional, cut out the bitter core
\ - Put all belgian endive in a gratin dish and add wine&cream
\ - Also add stripes of pancetta
\ - Add butter on top, then put in the 200C/390F oven.
\ - After 25-30min. add the breadcrumbs on top
\ - Use grill/salamander of the oven for around 5min. Finally drizzle with the cream&wine sauce.
