Ingredients

6 Belgian Endive
50g-100g pancetta/bacon
1 glass white wine
50ml heavy cream
5tbsp bread crumbs
5tbsp parmesan
30g butter


Preparation

  1. Put old bread/toast in a food-processor.




    2.Add parmesan to the breadcrumbs and mix it

  2. Slice lengthways the belgian endive in two halves

  3. Optional, cut out the bitter core

  4. Put all belgian endive in a gratin dish and add wine&cream



    \
  5. Also add stripes of pancetta



    \
  6. Add butter on top, then put in the 200C/390F oven.

  7. After 25-30min. add the breadcrumbs on top



    \
  8. Use grill/salamander of the oven for around 5min. Finally drizzle with the cream&wine sauce.
