A friend sent me this link today, and I absolutely love the idea of it. I’d like to try this with a drizzle of creamy, eggy dressing for a breadless BLT type experience.
Unless you can stuff the whole thing in your mouth in one gulp, I see no way these admittedly attractive cups can possibly maintain structural integrity. After the first bite, I’m guessing the plate looks a whole lot like salad with assorted half-gnawed bacon strips.
Obvious use is to shape it like a pita and make a ‘deconstructed BLT.’ How haut is that? Wash your hands first, and it will be perfectly good. And none of the carbs from the bread.
This goes a bit beyond larding. It’s not like the meat at the center is lean, anyway. I like to use some bacon fat for flavor in certain dishes, and I’ve studded lean roasts with bacon fat, but I think the bacon explosion looks downright nasty.
