Also made duck pastrami for this weekend. Breasts were sourced from Eataly though.
Heading to Corpus next week and might stop by. Thanks for the heads up.

Very happy with duck and rabbit for rillettes and pâté
If you ever get down to Austin, take a run out to Countryside Farms. Best duck rillettes we have ever had and a whole lot more. He supplies the high-end restaurants in Austin. Cash only and call to make sure he will be there. Worth the trip. https://countrysidefarmproducts.wordpress.com/ Oh, and he makes a heavenly smoked duck breast prosciutto too.

Call first to make certain he will be there that day. This is a one man operation.
I bought a duck there.
I believe everything is frozen.
I was satisfied and it was good quality.we need an almost-haiku bot on this forum.

Bought a nice duck there.
But everything is frozen.
I find quality.
Bought a lack of 4 Atlantic Salmon filets to check out the store they opened near us. The way they package it’s easy to sort through for equally sized pieces, which can be an issue with multi-packs. Quality was very good and the price was lower than our chain markets. FWIW the selection is 95% meats & poultry, so I have some exploring to do.
