Have not read this whole thread so not sure if these have been mentioned, but just wanted to shout out some favorite roasters who specialize in experimental processes -

I drink mostly washed coffees, but coffee is my first love and I had a big phase with naturals and other processes. I like to keep a bag around for an afternoon treat. Anaerobics can be great for espresso too given they aren’t too funky to start.

I buy a lot from Perc. Used to buy a lot from Klatch but they don’t carry the ones I like anymore and recent experiences have been underwhelming. Perc is pretty solid if not always wow. I usually buy 2 lb bags which last close to a month for us, maybe more like 3 weeks+ and I don’t find they improve over that window as suggested. I think they hold just fine but wouldn’t say they benefit from that extra time.
